Not sure if this is possible, but maybe just make all the players invisible during the countdown so they can still see the map?

You've got a point there. Spy in MCTF2 can go invisible despite having armor.

Yeah I was thinking of something like using the type of invisibility from the /vanish command that's on a lot of servers, except putting it on a timer.
