Quicktime was pretty bad in my experience, it stopped recording after a couple minutes and was very laggy.

I use screenflow.

You should try all of the above, if it lags look for a lag free alternative. I use debut video capture, i am unsure if you can use it on you mac cuz i use a toshapple. It doesn't lag my pc when gaming.
(A toshapple is a toshiba with a apple sticker )
