Not holding out a sword is a good strategy to use; they're unsure of what weapons you possess and recklessly charge into a fight, usually when you have great gear. If you really want to take things further, however, you can hold out a mediocre weapon (e.g: a wooden sword) in your first slot of your hotbar and then put your real weapon (e.g: an iron sword) to switch to before getting into a fight.

Yeah I didn't mean empty slot, I just meant anything else. I never have empty slots

I always hold a fishing rod out because I can use it to repel people who get too close which gives me time to conjure a plan. As others have said, people get scared if they see your sword so I pretend to want to team and slash wildly while walking backwards so people mistake me for a noob...then I end them.
