I like 1.8, I just didn't like the Chaotic Rampage that started when MCSG updated to 1.8

Pretty much, I don't think they gave it that much thought. But you have two hands a left and a right. I assume left and right click? I'm not sure.

The left hand is an option (for lefties). You have either your left or your right hand.

This is what happens when a professional dev team lets 11 year olds go wild with implementing suggestions into their game.

Notice how all of the highly rated suggestions on the reddit by respectable PvPers aren't being looked at. Mojang still thinks everyone plays survival.

So swords and shields are separate weapons and swords don't block at all? Now I have to switch between the two? How is one supposed to block and hit at the same time if they're two separate weapons?
