I know not sure what to put in the walls

Mossy stone brick, cracked stone brick.

Maybe line the edges with combinations of stairs, slabs, and pushed outward blocks, then put subtle patterns on the wall middles.

You could try getting rid of any unneeded blocks for the walls, and reduce the walls down to the height of the highest block in the lobby.

Put in a roof, and put designs in the walls with redstone lamps, glowstone, etc, similar to the current lobby.

In this picture, you can see out a window and it's all superflat. I'd suggest putting some mountains or some type of terraforming out there and just make it look pretty.

The server we were building on isn't up, and the host isn't around

An upside down forest, a speed beacon to make the lobby less slow, parkour, and Easter eggs up the wazoo....
