I usually organize my inventory. It's good for crafting faster, because you don't have to look through useless items to get a certain resource. But organizing your inventory isn't extremely important, it's mainly the hotbar I keep organized.

The only organizing I usually do is making sure that my sword, bow, and F&S are kept in a row next to each other. They can be in slots 123, 678, 345, I don't really care. I use my scroll wheel on my mouse to get to my weapons, so I can adjust very easily for wherever they are.
