If I already have stuff on my computer downloaded, for example, things like Steam and Sims3, will it delete all those?

As DeformedChild said, it won't remove your current stuff. You'll just have 2 accounts on your computer, your current one with steam and whatnot on it, and the new one that will have minecraft and java on it. (I believe you'll have to install java onto this new account so the directory is fixed, but I'm not entirely sure.)

Yup! But you can't just change the account you have now, for all the directiorys will still have it. Making the new account is the easiest way.
