I heard that jump attacking would gives you a double times of damage then just hitting. Is that true?

Its could do double damage. When you fall from anything and hit someone while falling, You'll see sparkles. That means you scored a critical hit. Here's the most damage you could possibly do with all the weapons. http://www.minecraftwiki.net/wiki/Damage

There are different scenarios in which to use both tactics.
In wide open areas, use strafing and jumping. As when you block hit, it breaks your sprint. And if you're in trouble you can run, place fint/steel bow them etc.
In smaller areas (eg Tunnels, Small houses) BLOCK HIT. There's no room to strafe so just block hit for your life.

AND IF YOU WANT TO BE FANCY, WHY NOT JUMP AND BLOCK HIT EH? :3​

if you are chasing someone DON'T EVER EVER EVER WALK STRAIGHT TOWARD THEM cause (if they're somewhat pros) they will snipe and burn you with flint and steel. And when they snipe you or trying to place a fire hit 'em. Hard. This is base on experience and it always work. The enemies always think that we are chasing them straight forward. Use this dont-chase-straight as a strategy to get more hit when they are trying to snipe or burn us. And what so funny about it that they are always tries to snipe or burn us even if they know we don't chase em straight forward lol
