Like it was mentioned before, just change your minecraft.jar. This will be made easier when 1.6 comes out, a new launcher is being released that will allow you to easily change jars.

Go to your .minecraft folder (type %appdata% in your folder browser thingy) then in .minecraft/bin in there you will find the minecraft.jar. Right click and click cut, go back to .minecraft and paste it in there or make a new folder called jars and paste it in there.
Open minecraft and force update, this will download a fresh jar. Go back to .minecraft/bin and you will find a new minecraft.jar put different mods in that jar.
If you want to swap you jar, just remove the jar in .minecraft/bin (Don't forget to rename it!) and move it else where and place in the jar you want to use.

E.g. minecraft-1.5.1-Optifine is located in .minecraft/jars I right click and cut. Next I go to .minecraft/bin and paste it in there. I then right click and cut the original minecraft.jar and paste in the .minecraft/jars. I then go back to .minecraft/bin and rename the minecraft-1.5.1-Optfine to just minecraft.
