I've been talking to a few friends about some older types of games, like Fallout 3, some Mario games, and many others. I'm just wondering what makes a good game.... well, good. There has to be some reason why you don't play it for like an hour and then never play it again, right?

Continuing our conversation, I see? :p

Well, what makes a game good is the storyline, and the replay value. If there is something you are striving to accomplish, you damn well are gonna accomplish it. Games where there is a ton of stuff to do and unlock are pretty great games, even if they aren't that amazing.^_^

Then there are the good games that have very little replay value. They are amazing the first few times you play them, but then they start to get old. However, they are still fun games and worth the money. :)

A truly great game combines both concepts and ideas; like Minecraft. ;)

There are some games that just get repetitive for me then it just gets boring :/ (Example, like a RPG)

Every person has their gaming preferences and with this in mind every game is a little different from the other one. You're not going to like every game ever made, but with the games you might dislike there are loads of people who might like it: so this is a really hard question to answer.
The first thing that is easily the most important is the entertainment factor. It needs to have something "exciting" going on that keeps the game going: whether it be constant new mini-games coming your way (Mario Party), danger and traps in the area (Survival Games) or just more bad guys to shoot up (Uncharted 2). Another thing that people seem to look at (Although I personally don't) is the graphics, but when it comes to Minecraft the graphics aren't exactly stellar.
One thing that can easily turn me off from a game is sloppy controls and really low frame rates (If you play old N64 games you'll know what I'm talking about). Things that I love seeing in games is great voice acting as well as original characters and level designs. I want everything I see in the game to be something that looks fresh and attractive to the eyes.

Overall, for me a good game depends on the entertainment factor, some kind of constant action, unique and interesting level design, and (depending on the year the game was made) good voice acting.

IMO, a good game firstly needs a story line, possibilities the player can do, original missions and THEN graphics. From what I've seen, AC4 is just like AC3 just with better graphics..

There are many, many different aspects of what makes a game, or even a general form of media, good. Since I'm busy this is all I had time to write about.

Music:
You want a memorable soundtrack, one that people will remember and actively want to listen to outside of the game. For instance, the creator of the music for the original Legend of Zelda is quoted as having listened to his music for hours on repeat, to make sure that it never got dull or annoying. And you can see it payed off, people still cover and listen to those songs today. I think a song should have these important factors
Immersive - The music should fit the level and give the level itself a feeling of life.
Doesn't get tiring - If you're stuck on a particularly hard level, you will be hearing certain songs on loop a lot, so the songs should not get annoying and tiring to the ear even after quite a while.
Isn't distracting - While the music should be good, it should not be so good and so loud, that it takes precedence over the game, and distracts from it.

Some good soundtracks in my opinion are:
Legend of Zelda
Mario (But gets kinda annoying)
LoL
Bad examples:
Blacklight 2 (all the time a 1 minute music of robot farts in a loop).

Another soundtrack I really enjoy is the music for Portal 1 and especially 2. It has some incredibly memorable songs (most notably the ending songs) and in general the music really fits the mood, with a nice ambient feeling. Plus you can download the full soundtrack for Portal 2 for free officially! :D
