Even the 3rd one can't handle that, you need at the very least a 770 to get 75-90 depending on the map, which is what I get. If you want to have 100+ while recording, you're going to have to either build it yourself or pay a heavy price for it if you want it prebuilt. If you're going to go prebuilt, I would highly recommend checking this company out: http://www.originpc.com/.

Otherwise if you can live with not being able to play with shaders, go with the second one. It will run everything just fine, although maybe not on ultra settings. To answer your other question, you should get a 3rd or 4th generation i5 processor and you really don't need more than 8 GB of RAM, so go with that. Another 8 is fairly cheap to add later anyways if you feel like you need it.
Could the 2nd package get over 50 FPS with shaders?

The third one could, but the second would probably sit around there or a bit lower.
Would getting an i7 on the second package improve the performance on Minecraft and other games?

Build it your self, its not very hard and will save you a lot of money. Plus you will get exactly what you want

Would getting a better processor improve your rendering time for videos?
