So I get that someone can combo you off if you get hit in the air, but I am confused on why I am getting hit into the air even though I did not jump. Is it a game mechanic that I didnt know about or is it something unique to the server?

You can't really juggle people in Minecraft.
I'm saying in the sense that you can get massive combos on people when they're in the air since they are unable to retaliate, allowing for you give severe damage to the opponent.

That all depends on how your opponent is launched into the air.

But still why am I being hit into the air by someone when I haven't jumped myself?
A player's hitbox is on his feet. This means that your attacks will register faster on their legs than on any other body part. If you're able to hit a person multiple times there (you'll also need to have good ping), it may be that the player actually does get hit into the air since the second hit is 'under their feet'.
