I just have enough for gold donor with the promo right now, but I don't know what will happen if I override my Iron donor right now. If you can, can anybody reset my donor?

One more thing, is it possible for someone to reset my stats?

If you buy Gold Sponsor while your Iron Sponsor is still active, your Iron Sponsor will just be overridden. There's no need to reset your donor. On your second question, currently there is no way to reset the stats of an existing account. You could of course buy a new Minecraft account and start fresh, but that's up to you.
