Yep, by myself, brick for brick, it's taking forever!

Thats great! I like it so far but it looks alittle boring. Try changing a few of the blocks.Like mossy cobble to
Mossy stonebrick or something.

Yeah you should make some wierd thngs to like random houses with signs or something so players can really get into it.

If you don't want to replace all the cobble by hand, you could bring it into MCEdit and use the Fill tool: replace [whatever] -> stone brick -> 25% chance per block.
