My top three favourites are Ethoslab, Xisumavoid and CaptainSparklez. Etho would probably rank on top simply because he's never advertised once in his videos, and I really respect him for the fact that he makes videos solely for the pleasure of his audience, and doesn't care about people "smacking that like button" or sharing or whatever.
